  • 23 pounds whole organic chicken
  • 1 pound carrots, cut into chunks
  • 1 large onion, cut into chunks
  • 1 stalk celery, cut into slices
  • 32 ounces chicken broth
  • 2 cups water
  • 1 bay leaf
  • 2 tablespoons basil
  • 2 tablespoons parsley
  • 2 tablespoons tarragon
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup orzo pasta

Instructions

  1. Dry the chicken inside and out with paper towels.
  2. Place the chicken into a medium stockpot and cover with chicken broth and water. Bring to a boil over high heat.
  3. While the broth is coming to a boil, chop the onion, carrots, and celery into chunks.
  4. Reduce the heat to a simmer and add the chopped vegetables, bay leaf, basil, parsley, tarragon, salt, and pepper. Stir everything together.
  5. Simmer for 1 hour and 15 minutes, allowing the chicken to cook and the flavors to develop.
  6. Add the orzo pasta and cook for an additional 15 minutes, or until the pasta is tender.
  7. Remove the chicken from the pot and shred the meat from the bones. Return the shredded chicken back into the pot.
  8. Ladle the soup into bowls and serve hot, optionally with crusty bread on the side.

  • You can substitute orzo with any small pasta, rice, or gluten-free pasta for dietary preferences.
