Description

This grilled cheese sandwich recipe features a crispy, buttery exterior with molten cheese inside. Using two types of cheese, mozzarella for its melt and vintage cheddar or gruyere for its flavor, and sourdough bread, this is the ultimate comfort food.


Ingredients

  • 2 slices sourdough bread
  • 30g salted butter (for spreading)
  • 1/3 cup vintage cheddar cheese, freshly grated
  • 30g mozzarella cheese, freshly grated

Instructions

  1. Grate the mozzarella and vintage cheddar or gruyere cheeses.
  2. Spread salted butter on both sides of each slice of bread.
  3. Heat a skillet over medium-low heat and lightly toast both slices of bread for about 1 minute.
  4. Flip one slice of bread, then pile on the mozzarella and vintage cheddar or gruyere cheese.
  5. Place the other slice of bread on top with the toasted side facing inward and in contact with the cheese.
  6. Press down lightly and cook for 3 minutes until the underside is golden brown. If browning too quickly, lower the heat slightly.
  7. Turn the sandwich over and cook the other side for another 3 minutes until golden brown and the cheese is fully melted.
  8. Remove from the pan, transfer to a cutting board, and cut in half to reveal the perfect cheese pull.

Notes

  • Freshly grated cheese melts better than pre-shredded cheese.
  • If the bread is browning too quickly, lower the heat to ensure the cheese melts properly.
  • Try different cheese combinations for a unique flavor.
  • If making ahead, store in the fridge and reheat in a skillet.
