Description

Guinness Cottage Pie is a rich and hearty Irish comfort food made with seasoned ground beef, tender vegetables, and a deep Guinness stout gravy, all topped with creamy mashed potatoes and baked until golden.


Ingredients

  • 1 1/2 pounds ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 tablespoons tomato paste
  • 1 cup Guinness stout
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste
  • 2 pounds russet or Yukon Gold potatoes, peeled and chopped
  • 4 tablespoons butter
  • 1/2 cup milk or cream

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the chopped potatoes in a large pot of salted water and bring to a boil. Cook for 15–20 minutes until fork-tender. Drain well.
  3. Mash the potatoes with butter and milk until smooth and creamy. Season with salt and pepper and set aside.
  4. In a large skillet over medium heat, sauté onion, carrots, and celery for 5–7 minutes until softened. Add garlic and cook for 1 minute more.
  5. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  6. Stir in tomato paste and cook for 1 minute to deepen flavor.
  7. Pour in the Guinness stout, scraping up any browned bits from the bottom of the pan. Simmer for 3–5 minutes to reduce slightly.
  8. Add beef broth, Worcestershire sauce, thyme, salt, and pepper. Simmer for 8–10 minutes until the mixture thickens into a rich gravy.
  9. Transfer the beef mixture to a baking dish and spread evenly.
  10. Spoon the mashed potatoes over the filling and spread to seal the edges.
  11. Bake for 25–30 minutes until the top is lightly golden and the filling is bubbling.
  12. Broil for 2–3 minutes for a crisp golden finish, if desired. Let rest for 10 minutes before serving.

Notes

  • For deeper flavor, allow the meat filling to simmer longer to fully develop the Guinness stout gravy.
  • Create ridges in the mashed potatoes with a fork to achieve a crispier topping.
  • You can assemble the pie a day in advance and refrigerate before baking.
  • Freeze before or after baking for up to 3 months; thaw overnight before reheating.
