Description
Guinness Cottage Pie is a rich and hearty Irish comfort food made with seasoned ground beef, tender vegetables, and a deep Guinness stout gravy, all topped with creamy mashed potatoes and baked until golden.

- 1 1/2 pounds ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 2 tablespoons tomato paste
- 1 cup Guinness stout
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon fresh thyme leaves
- Salt and black pepper to taste
- 2 pounds russet or Yukon Gold potatoes, peeled and chopped
- 4 tablespoons butter
- 1/2 cup milk or cream
Instructions
- Preheat the oven to 375°F (190°C).
- Place the chopped potatoes in a large pot of salted water and bring to a boil. Cook for 15–20 minutes until fork-tender. Drain well.
- Mash the potatoes with butter and milk until smooth and creamy. Season with salt and pepper and set aside.
- In a large skillet over medium heat, sauté onion, carrots, and celery for 5–7 minutes until softened. Add garlic and cook for 1 minute more.
- Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- Stir in tomato paste and cook for 1 minute to deepen flavor.
- Pour in the Guinness stout, scraping up any browned bits from the bottom of the pan. Simmer for 3–5 minutes to reduce slightly.
- Add beef broth, Worcestershire sauce, thyme, salt, and pepper. Simmer for 8–10 minutes until the mixture thickens into a rich gravy.
- Transfer the beef mixture to a baking dish and spread evenly.
- Spoon the mashed potatoes over the filling and spread to seal the edges.
- Bake for 25–30 minutes until the top is lightly golden and the filling is bubbling.
- Broil for 2–3 minutes for a crisp golden finish, if desired. Let rest for 10 minutes before serving.
Notes
- For deeper flavor, allow the meat filling to simmer longer to fully develop the Guinness stout gravy.
- Create ridges in the mashed potatoes with a fork to achieve a crispier topping.
- You can assemble the pie a day in advance and refrigerate before baking.
- Freeze before or after baking for up to 3 months; thaw overnight before reheating.
