Halal Cart Lamb is a bold street-style dish inspired by famous halal food carts. Tender spiced lamb is seared until caramelized and served over fluffy rice with crisp lettuce, tomatoes, creamy white sauce, and hot sauce for a satisfying and flavorful meal.

Instructions
- In a mixing bowl, combine olive oil, minced garlic, lemon juice, cumin, paprika, oregano, salt, and black pepper to create the marinade.
- Add the sliced lamb to the marinade and mix well so all pieces are evenly coated. Let it marinate for at least 30 minutes, or up to several hours in the refrigerator.
- Rinse the rice under cold water until the water runs clear, then cook according to package instructions until fluffy.
- Heat a large skillet or griddle over medium-high heat and add a small amount of oil.
- Add the marinated lamb to the pan in a single layer and cook undisturbed for 2–3 minutes to develop a browned crust.
- Stir the lamb and continue cooking for another 4–6 minutes until fully cooked and slightly crispy around the edges.
- In a small bowl, prepare the white sauce by whisking together mayonnaise, yogurt, vinegar, sugar, lemon juice, and minced garlic until smooth.
- Chop the lettuce and dice the tomatoes for fresh toppings.
- To assemble, place a generous portion of rice on a plate or bowl.
- Add the cooked lamb on top of the rice, then scatter lettuce and tomatoes over the dish.
- Drizzle the white sauce generously over the lamb and rice.
- Finish with hot sauce to taste and serve immediately with warm pita if desired.
