Instructions

  1. Prepare the watermelon by removing the rind and cutting it into small chunks. Remove any seeds if using a seeded watermelon.
  2. Add watermelon chunks, lime juice, lime zest, mint leaves, and optional sweetener or coconut water to a blender.
  3. Blend the mixture until completely smooth and taste the puree. Adjust sweetness or lime flavor if needed.
  4. Pour the watermelon mixture into popsicle molds, leaving a small space at the top for expansion while freezing.
  5. Insert popsicle sticks and freeze for at least 4 hours or until the popsicles are completely solid.
  6. Remove the popsicles from the molds by briefly running the mold under warm water and serve immediately.
