Instructions

  2. In a medium bowl, combine all-purpose flour, baking powder, and salt. Whisk thoroughly to combine.
  3. Using an electric mixer, beat softened butter and granulated sugar in a large bowl until the mixture is light and fluffy (about 3-4 minutes).
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract, almond extract, and orange zest (if using).
  5. Gradually add the flour mixture and sour cream to the butter mixture, alternating between the two. Start and end with flour. Mix gently to avoid overworking the batter.
  6. Fold fresh cranberries into the batter, ensuring they are evenly distributed throughout.
  7. Pour the batter into the prepared loaf pan, smoothing the top. Bake for 55-65 minutes, or until a toothpick inserted comes out clean. If the top browns too quickly, cover with aluminum foil.
