- 2 tablespoons lemon juice (juice of 1 lemon)
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons honey (or to taste)
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
Instructions
- Minced the garlic and juice the lemons. Measure out the remaining ingredients.
- In a food processor or blender, add olive oil, apple cider vinegar, Dijon mustard, honey, garlic, oregano, salt, and pepper.
- Blend or process until smooth and emulsified. Alternatively, whisk by hand while slowly streaming in the olive oil for a smooth mixture.
- Chill the dressing in the fridge for about 30 minutes before serving for the best flavor.
- Shake or whisk the dressing before serving as it may separate after sitting.

- Use fresh garlic and lemon juice for the best flavor.
- If the dressing separates after refrigeration, shake or whisk it to recombine.
- If you prefer a sweeter dressing, increase the honey to taste.
