  • 1/2 batch of air fryer chicken tenders (without buffalo sauce)
  • 1 cup bagged coleslaw mix
  • 1 cup shredded lettuce
  • 2 pickles, diced
  • 1/4 cup radishes, thinly sliced
  • 1/2 cup cherry tomatoes, sliced
  • 2 10-inch whole wheat tortillas
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp plain Greek yogurt
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 2 tsp honey
  • 2 tsp white vinegar

Instructions

  1. Prepare the air fryer chicken tenders according to the recipe (skip the buffalo sauce if preferred).
  2. Make the honey mustard sauce by whisking together Greek yogurt, mayo, Dijon mustard, honey, and white vinegar in a small bowl.
  3. In a large bowl, combine the coleslaw mix, shredded lettuce, diced pickles, radishes, and sliced cherry tomatoes. Drizzle with ¾ of the honey mustard sauce, saving some for the end.
  4. Place a whole wheat tortilla flat on a clean surface. Add half of the coleslaw mixture to the center of each tortilla. Top with 2 chicken tenders, sprinkle with shredded cheddar cheese, and drizzle with the remaining honey mustard sauce.
  5. Fold in the sides of the tortilla, roll from the bottom, and press gently to ensure a tight wrap. Serve immediately or store for later.

  • For a gluten-free version, use gluten-free tortillas and chicken tenders.
  • For a dairy-free version, skip the Greek yogurt and cheese, or use a dairy-free alternative.
