Description

Honey roasted butternut squash is a simple and delicious side dish that combines the natural sweetness of squash with the warm flavors of honey and cinnamon. It’s perfect for a cozy fall dinner or a holiday feast.


Ingredients

  • 1 butternut squash, peeled, seeds removed, and cut into chunks
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1/4 teaspoon ground cinnamon (optional)
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and move the rack to the middle position.
  2. Cut the squash in half lengthwise and scoop out the seeds. Peel the squash using a sharp knife, then cut it into roughly 1-inch cubes.
  3. Toss the squash cubes with olive oil, honey, cinnamon, salt, and pepper in a large bowl or directly on a baking sheet.
  4. Arrange the coated squash in a single layer on the baking sheet.
  5. Roast for 20–25 minutes, tossing halfway through, until the squash is golden and tender when pierced with a knife.
  6. Serve immediately and enjoy!

  • If you prefer a slightly different flavor, you can substitute honey with maple syrup.
  • Ensure the squash cubes are evenly sized for consistent roasting.
