  • 2 Honeycrisp apples, thinly sliced
  • 1 cup feta cheese, crumbled
  • 4 cups arugula
  • 1/2 cup pomegranate arils
  • 1/4 cup candied pecans
  • 1/4 cup pumpkin seeds
  • 2 slices prosciutto
  • 1/4 cup olive oil
  • 3 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • 1 tbsp dijon mustard
  • 1 tsp fresh thyme
  • 1 tsp fresh sage
  • 1/4 tsp cayenne pepper
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. On the prepared baking sheet, toss together the pecans, pumpkin seeds, maple syrup, cayenne, and cinnamon. Arrange them in a single layer.
  3. Lay the prosciutto flat around the nuts and bake for 10-15 minutes, or until the nuts are toasted and the prosciutto is crisp. Watch closely.
  4. Meanwhile, in a large salad bowl, combine arugula, thinly sliced Honeycrisp apples, avocado, and pomegranate arils.
  5. To make the vinaigrette, combine apple cider vinegar, olive oil, dijon mustard, maple syrup, thyme, and sage in a jar with a lid and shake to mix.
  6. Once the nuts and prosciutto are roasted, toss the salad with the vinaigrette, and top with the nuts, prosciutto, and crumbled feta cheese.
  7. Serve immediately and enjoy!

Notes

  • For a vegetarian version, replace prosciutto with crispy roasted chickpeas or smoked almonds.
