Description

This classic Icebox Cake is an easy no-bake dessert made with layers of graham crackers, creamy whipped filling, and fresh berries. Chilled until soft and cake-like, it is a refreshing make-ahead treat perfect for summer gatherings, holidays, and family celebrations.

Ingredients

Scale
  • 18 graham crackers or chocolate wafer cookies
  • 2 cups heavy whipping cream
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 2 cups fresh berries (strawberries, blueberries, or raspberries)
  • 1/4 cup chocolate shavings or cocoa powder for garnish (optional)

Instructions

  1. Chill a mixing bowl and beaters for 15 minutes before starting.
  2. In a large bowl, beat the softened cream cheese until smooth.
  3. Add powdered sugar, vanilla extract, and milk, then mix until fully combined.
  4. In a separate chilled bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until smooth and airy.
  6. Spread a thin layer of filling in the bottom of a 9×13-inch dish.
  7. Arrange a single layer of graham crackers over the filling.
  8. Spread a generous layer of cream mixture over the crackers.
  9. Repeat the layers of crackers and filling until all ingredients are used, finishing with a cream layer on top.
  10. Cover and refrigerate for at least 6 hours, preferably overnight.
  11. Garnish with fresh berries and chocolate shavings before serving.

Notes

  • Use cold heavy cream for easier whipping and better volume.
  • Store leftovers covered in the refrigerator for up to 3 days.
  • The cake can be frozen for up to 1 month and thawed in the refrigerator before serving.
