Irish Nachos are a hearty pub-style appetizer made with crispy roasted potato slices topped with melted cheddar cheese, smoky bacon, green onions, and served with cool sour cream. This comforting twist on classic nachos is perfect for game day, parties, or an indulgent snack.

- 2 pounds russet potatoes, sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded sharp cheddar cheese
- 6 slices bacon, cooked and crumbled
- 3 green onions, thinly sliced
- 1/2 cup sour cream
Instructions
- Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Place the sliced potatoes in a large bowl, drizzle with olive oil, and season with salt and black pepper. Toss until evenly coated.
- Arrange the potatoes in a single layer on the prepared baking sheet, making sure they do not overlap.
- Roast for 25–30 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the edges.
- Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese evenly over the hot potatoes.
- Top with crumbled bacon and return to the oven for 5–7 minutes, or until the cheese is fully melted and bubbly.
- Remove from the oven and garnish with sliced green onions.
- Serve immediately with sour cream on the side.
Notes
- For extra crispy potatoes, soak the slices in cold water for 20 minutes and dry thoroughly before roasting.
- You can substitute turkey bacon or omit bacon for a vegetarian version.
