Ingredients

  • Heavy cream (480 ml / 2 cups): ensures moisture and a smooth, creamy consistency
  • Onion (1 medium): adds mild sweetness and depth of flavor
  • Garlic (2 cloves): enhances the savory notes without overpowering the dish
  • Salt (1.5 tsp): balances and enhances all flavors
  • Black pepper (0.5 tsp): adds gentle warmth and contrast

Instructions

  1. Preheat the oven to 180°C (350°F) and lightly grease a baking dish.
  2. Peel the potatoes and slice them thinly and evenly to ensure uniform cooking.
  3. Finely slice the onion and mince the garlic.
  4. Arrange a layer of potatoes in the baking dish, slightly overlapping. Season lightly with salt and pepper.
  5. Sprinkle a portion of onion and garlic over the potatoes, then drizzle with melted butter and a little cream.
  6. Repeat the layering process until all ingredients are used, finishing with cream and butter on top.
  7. Cover the dish tightly with foil and bake for 60 minutes, or until the potatoes are tender when pierced with a knife.
  8. Remove the foil and bake for an additional 20 minutes until the top is lightly golden and bubbling.
  9. Remove from the oven and let the Irish Potato Pie rest for 10 minutes before serving.
