Description
Irish Potato Pie is a classic creamy baked potato dish made with thinly sliced potatoes, butter, cream, and aromatics. It is rich, comforting, and perfect as a hearty side dish or vegetarian main for family dinners and festive occasions.
Ingredients
- Potatoes (1.5 kg / 3 lb): the base of the pie, providing structure and a tender, creamy texture
- Unsalted butter (80 g / 5 tbsp): adds richness and helps create soft, flavorful layers
- Heavy cream (480 ml / 2 cups): ensures moisture and a smooth, creamy consistency
- Onion (1 medium): adds mild sweetness and depth of flavor
- Garlic (2 cloves): enhances the savory notes without overpowering the dish
- Salt (1.5 tsp): balances and enhances all flavors
- Black pepper (0.5 tsp): adds gentle warmth and contrast
- Fresh parsley (2 tbsp, chopped): provides freshness and light herbal aroma
Instructions
- Preheat the oven to 180°C (350°F) and lightly grease a baking dish.
- Peel the potatoes and slice them thinly and evenly to ensure uniform cooking.
- Finely slice the onion and mince the garlic.
- Arrange a layer of potatoes in the baking dish, slightly overlapping. Season lightly with salt and pepper.
- Sprinkle a portion of onion and garlic over the potatoes, then drizzle with melted butter and a little cream.
- Repeat the layering process until all ingredients are used, finishing with cream and butter on top.
- Cover the dish tightly with foil and bake for 60 minutes, or until the potatoes are tender when pierced with a knife.
- Remove the foil and bake for an additional 20 minutes until the top is lightly golden and bubbling.
- Remove from the oven and let the Irish Potato Pie rest for 10 minutes before serving.
Notes
- Slice the potatoes evenly to avoid undercooked or crunchy layers.
- Let the pie rest before slicing so the layers set properly.
- For a lighter version, replace half of the cream with milk.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
