Description
Irish trifle is a traditional, no-bake dessert perfect for any occasion, with layers of soft cake, fruity jam, creamy pudding, and whipped cream. This light, yet satisfying dessert is ideal for St. Patrick’s Day or anytime you crave something festive and delicious.

- 16 ladyfinger cookies (or use pound cake or sponge cake cut into 2x3 inch pieces)
- 1 cup strawberry or raspberry jam
- 1/4 cup cream sherry
- 1 package strawberry or raspberry gelatin, prepared and fully set
- 1 package vanilla pudding, prepared
- 2 cups heavy cream
- 1/2 cup powdered sugar
- Fresh raspberries or strawberries for garnish
- Coarse pink sugar for garnish (optional)
Instructions
- Cut the ladyfingers in half and spread each half with jam, forming sandwich layers. Alternatively, use slices of pound cake or sponge cake.
- Drizzle the cake sandwiches with cream sherry.
- Line a glass bowl with the cake sandwiches, pressing them snugly along the bottom and sides.
- Whip the prepared gelatin into foam using an electric mixer, then spread over the cake sandwiches.
- Spread the prepared vanilla pudding over the gelatin layer.
- Whip the heavy cream with powdered sugar until soft peaks form, then spread it on top of the pudding layer.
- Garnish the trifle with fresh berries and coarse pink sugar, if desired. Serve immediately or refrigerate until ready to serve.
Notes
- If you can’t find ladyfinger cookies, use pound cake or sponge cake.
- For a non-alcoholic version, replace cream sherry with cranberry juice.
- Make the pudding and gelatin a day ahead to save time.
- Whip the gelatin thoroughly to create a light, fluffy texture.
- Do not over-soak the cake to prevent it from becoming soggy.
