Description

Italian Banana Pepper Chicken is a quick and flavorful baked chicken dinner made with juicy chicken breasts, tangy pickled banana peppers, Italian seasoning, butter, and melted mozzarella cheese. This easy Italian-inspired recipe is perfect for busy weeknights, family meals, and meal prep while delivering bold, comforting flavors with minimal effort.

Ingredients

Scale
  • 3 boneless, skinless chicken breasts, halved lengthwise
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup sliced pickled banana peppers, drained
  • 2 tablespoons butter, sliced
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish or baking sheet.
  2. Pat the chicken breasts dry with paper towels and brush both sides evenly with olive oil.
  3. Season both sides of the chicken with the Italian seasoning, garlic powder, and onion powder.
  4. Arrange the chicken breasts in a single layer in the prepared baking dish.
  5. Evenly distribute the drained banana peppers over each chicken breast.
  6. Top each piece of chicken with slices of butter.
  7. Bake for 20 minutes.
  8. Remove the dish from the oven and sprinkle the mozzarella cheese evenly over each chicken breast.
  9. Return the dish to the oven and bake for an additional 10 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  10. If desired, broil for 2 to 3 minutes until the cheese is lightly browned and bubbly.
  11. Allow the chicken to rest for 5 minutes before serving.

Notes

  • Drain the banana peppers well to prevent excess moisture in the baking dish.
  • Use freshly shredded mozzarella for the smoothest melt.
  • Chicken thighs may be substituted for chicken breasts if preferred.
  • Always cook chicken to an internal temperature of 165°F (74°C).
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze cooled portions for up to 3 months and thaw overnight before reheating.
  • Serve with roasted potatoes, pasta, rice, or a fresh green salad for a complete meal.
