Description

Juicy Mulberry Cobbler is a sweet, tart summer dessert with fresh mulberries and a golden, tender topping. Perfect served warm with ice cream or whipped cream, this cobbler is easy to make and adaptable for any gathering.

  • 1/2 cup full-fat milk: moistens the topping
  • 1 tsp vanilla extract: enhances flavor
  • 1/3 tsp salt: balances sweetness
  • Vanilla ice cream or whipped cream, for serving

Instructions

  1. Preheat oven to 350°F (175°C). Wash and gently pat dry the mulberries. Toss them with 1/4 cup sugar, 2 tbsp cornstarch, and juice of 1 lemon until coated.
  2. Transfer the berry mixture into a baking dish or divide evenly among ramekins.
  3. In a stand mixer, cream 12 tbsp butter and 2/3 cup sugar until fluffy. Beat in 1 large egg and 1 tsp vanilla extract.
  4. In a separate bowl, whisk together 2 cups flour, 3/4 tsp baking soda, and 1/3 tsp salt. Gradually add half to the wet mixture, followed by 1/2 cup milk, then the remaining flour, mixing until just combined.
  5. Spoon dollops of the cobbler topping over the berry filling, leaving gaps for steam.
  6. Bake ramekins for 20-25 minutes or a large dish for 40-45 minutes, until the topping is golden and the filling is bubbling.
  7. Allow to cool for at least 15 minutes before serving. Top with ice cream or whipped cream as desired.

Notes

  • If fresh mulberries aren’t available, frozen berries work perfectly without thawing.
  • To avoid a soggy topping, let the berry mixture sit for 10-15 minutes after coating with cornstarch.
  • Do not overmix the topping to maintain a tender, fluffy texture.
  • Make-ahead option: prepare filling and topping separately a day in advance.
