Description

Keto Spider Cucumber Appetizer Bites are a fun and low-carb snack that’s perfect for Halloween or any gathering. With fresh cucumber slices, a creamy filling, and spider legs made from olives, these bites are delicious, healthy, and visually appealing. Only 2 grams of net carbs per serving, they fit perfectly into a keto diet.


Ingredients

  • Black Olives: For spider legs and healthy fats
  • Medium Cucumber: Provides crunch and freshness
  • Cream Cheese: Adds creaminess and richness
  • Sour Cream: Provides tang and creaminess
  • Garlic Powder: Enhances flavor
  • Onion Powder: Adds savory undertones
  • Green Onions: For a fresh, mild onion flavor
  • Chives: Adds extra mild, onion-like flavor
  • Salt: Balances flavors

Instructions

  1. Slice the cucumbers into thin rounds, about 1/4 inch thick.
  2. In a mixing bowl, combine softened cream cheese, sour cream, garlic powder, onion powder, chives, green onions, and salt to taste.
  3. Transfer the cream cheese mixture into a piping bag or a Ziploc bag with the corner cut off.
  4. Pipe the cream cheese mixture onto each cucumber slice.
  5. Place a whole black olive on top of each cucumber slice to form the spider’s body.
  6. Slice remaining olives in half lengthwise, then cut each half into four slices to create the spider legs.
  7. Arrange four slices of olive on each side of the whole olive to form the spider legs.
  8. Serve immediately or chill before serving.

Notes

  • You can make the cucumber slices and filling a day ahead but assemble them closer to serving to maintain cucumber crunch.
  • If you don’t like olives, use bell pepper strips or jalapeño slices for spider legs.
  • Store leftovers in an airtight container in the fridge.
  • For a spicy version, add cayenne pepper to the cream cheese mixture or use jalapeños for legs.
