Description

Lemon Drop Cookies are a refreshing, easy-to-make treat that combines tangy lemon flavor with a sweet, soft cookie base. These cookies are perfect for any occasion, offering a zesty and light dessert option that will brighten your day.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp fresh lemon juice
  • 2 tbsp lemon zest
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until fully combined.
  5. Add the lemon juice and lemon zest to the mixture and stir until incorporated.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Scoop out tablespoon-sized portions of dough and roll into balls. Place on the baking sheet, spacing about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are golden brown and the centers are set.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, dust with powdered sugar and enjoy!

Notes

  • For best results, use fresh lemon juice and zest.
  • If you prefer thicker cookies, chill the dough for 30 minutes before baking.
  • Store cookies in an airtight container for up to one week at room temperature.
  • For a vegan version, replace the egg with a flax egg and use dairy-free margarine.
