- 1 tsp vanilla extract

- 2 tbsp lemon zest
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

- In a large bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until fully combined.
- Add the lemon juice and lemon zest to the mixture and stir until incorporated.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Scoop out tablespoon-sized portions of dough and roll into balls. Place on the baking sheet, spacing about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown and the centers are set.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, dust with powdered sugar and enjoy!
Notes
- For best results, use fresh lemon juice and zest.
- If you prefer thicker cookies, chill the dough for 30 minutes before baking.
- Store cookies in an airtight container for up to one week at room temperature.
- For a vegan version, replace the egg with a flax egg and use dairy-free margarine.
