Description

  • 2 tablespoons granulated sugar
  • 1/4 cup finely chopped pecans or walnuts
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 package (8 oz) cream cheese, softened
  • 1 cup granulated sugar
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 container (8 oz) whipped topping, thawed (for cream cheese layer)
  • 2 boxes (3.4 oz each) lemon instant pudding mix
  • 3 cups cold milk
  • 1 container (8 oz) whipped topping, thawed (for top layer)
  • Optional: Lemon zest or lemon slices for garnish

Instructions

  1. Preheat oven to 350°F and grease a 13×9-inch baking dish.
  2. In a large bowl, combine flour, sugar, chopped nuts, and softened butter. Mix until crumbly.
  3. Press mixture evenly into the bottom of the baking dish.
  4. Bake for 15–18 minutes, or until golden brown. Let the crust cool completely.
  5. In a bowl, beat cream cheese and sugar until smooth.
  6. Add lemon zest, lemon juice, and whipped topping. Mix until well combined.
  7. Spread the cream cheese mixture evenly over the cooled crust. Refrigerate for at least 30 minutes.
  8. In a separate bowl, whisk pudding mix and cold milk until smooth and thickened.
  9. Spread pudding mixture over the chilled cream cheese layer. Refrigerate for at least 15 minutes.
  10. Spread the remaining whipped topping over the pudding layer.
  11. Optional: Garnish with lemon zest or lemon slices.
  12. Refrigerate for at least 1 hour or until ready to serve.
