- Juice of 1 lemon
- 1 container (8 oz) whipped topping, thawed (for cream cheese layer)
- 2 boxes (3.4 oz each) lemon instant pudding mix
- 3 cups cold milk
- 1 container (8 oz) whipped topping, thawed (for top layer)
- Optional: Lemon zest or lemon slices for garnish
Instructions
- Preheat oven to 350°F and grease a 13×9-inch baking dish.
- In a large bowl, combine flour, sugar, chopped nuts, and softened butter. Mix until crumbly.
- Press mixture evenly into the bottom of the baking dish.
- Bake for 15–18 minutes, or until golden brown. Let the crust cool completely.
- In a bowl, beat cream cheese and sugar until smooth.
- Add lemon zest, lemon juice, and whipped topping. Mix until well combined.
- Spread the cream cheese mixture evenly over the cooled crust. Refrigerate for at least 30 minutes.
- In a separate bowl, whisk pudding mix and cold milk until smooth and thickened.
- Spread pudding mixture over the chilled cream cheese layer. Refrigerate for at least 15 minutes.
- Spread the remaining whipped topping over the pudding layer.
- Optional: Garnish with lemon zest or lemon slices.
- Refrigerate for at least 1 hour or until ready to serve.
