- 1 cup granulated sugar
- 1 teaspoon baking soda
- ¾ teaspoon salt
- ½ teaspoon ground cinnamon
- ½ teaspoon nutmeg
- ½ cup vegetable oil
- 2 eggs
- ⅓ cup water
- 1 cup canned pumpkin puree (Libby’s recommended)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, sift together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- Whisk together the eggs, oil, and water in a separate bowl.
- Combine the wet ingredients with the dry ingredients, stirring until just combined.
- Fold in the pumpkin puree until smooth.
- Grease 4 mini loaf pans or 1 large loaf pan and pour the batter evenly into each pan.
- Bake in the oven for 30 minutes for mini loaves, or 55 minutes for a large loaf. Check doneness with a toothpick; it should come out clean.
- Let the bread cool before slicing and serving. Enjoy!

- For a sweeter bread, you can increase the sugar by ½ cup.
