Ingredients

  • 1 ⅓ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • ½ cup vegetable oil
  • 2 eggs
  • ⅓ cup water
  • 1 cup canned pumpkin puree (Libby’s recommended)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, sift together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
  3. Whisk together the eggs, oil, and water in a separate bowl.
  4. Combine the wet ingredients with the dry ingredients, stirring until just combined.
  5. Fold in the pumpkin puree until smooth.
  6. Grease 4 mini loaf pans or 1 large loaf pan and pour the batter evenly into each pan.
  7. Bake in the oven for 30 minutes for mini loaves, or 55 minutes for a large loaf. Check doneness with a toothpick; it should come out clean.
  8. Let the bread cool before slicing and serving. Enjoy!

Notes

  • For a sweeter bread, you can increase the sugar by ½ cup.
  • Make sure to measure your flour accurately to avoid dry bread.
  • Feel free to add chocolate chips, nuts, or raisins for a fun twist.
