  • 1 tablespoon olive oil
  • 1/2 cup shredded mozzarella cheese (optional)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup ranch dressing
  • 1/4 cup mayonnaise
  • 2 garlic cloves, minced
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup grated Parmesan cheese (for crust)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Pound chicken breasts to even thickness and season both sides with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil in an oven-safe skillet over medium-high heat and sear chicken for 3-4 minutes per side until golden brown.
  3. Transfer skillet to a 400°F oven and bake for 10-12 minutes or until the internal temperature reaches 165°F.
  4. In a bowl, mix ranch dressing, mayonnaise, grated Parmesan, minced garlic, Italian seasoning, and red pepper flakes. Add mozzarella if using.
  5. In another bowl, combine Panko breadcrumbs, grated Parmesan, and melted butter to create the crust.
  6. Remove chicken from oven, spread Parmesan topping over each piece, then sprinkle breadcrumb mixture on top and press lightly.
  7. Broil for 2-3 minutes until topping is golden and crispy. Watch closely to avoid burning.
  8. Garnish with chopped parsley and serve hot with your choice of sides.
