Ingredients
Scale
- 60 Ritz crackers, crushed
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 6 oz. orange juice concentrate, thawed but still icy
- 14 oz. sweetened condensed milk

- 28 oz. mandarin oranges, drained and divided
Instructions
- Mix melted butter, crushed crackers, and sugar in a bowl until combined.
- Press the cracker mixture into the bottom of a 9 x 13-inch glass dish, reserving 1/4 cup of the mixture for the topping. Chill the crust in the fridge.
- In a separate bowl, combine the orange juice concentrate and sweetened condensed milk.
- Fold in the thawed whipped topping until well combined.
- Gently stir in the mandarin oranges, reserving a few segments for topping.
- Pour the orange mixture over the chilled cracker crust, spreading evenly.
- Chill for 15 minutes to set the filling.
- Sprinkle the reserved cracker crumbs on top and add the saved mandarin orange segments for garnish.
- Chill for an additional hour before serving. Serve chilled.
Notes
- Use a glass or ceramic dish for best results.
- Ensure the mandarin oranges are well-drained to avoid a watery salad.
- If you want to make clean slices, dip your knife in cold water and wipe it dry between cuts.
- This dessert can be made ahead of time and stored in the fridge for up to 3 days.
