Instructions

  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan (8-1/2 x 4-1/2 inches) with cooking spray or butter.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a stand mixer, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the mandarin orange zest, mandarin juice, and sour cream.
  5. Slowly add the dry ingredients to the wet ingredients and mix until just incorporated.
