Description

Marry Me Chicken is a rich and creamy one-pan dish made with seared chicken breasts in a velvety Parmesan sauce infused with garlic, sun-dried tomatoes, and red pepper flakes. This dish is perfect for busy weeknights yet elegant enough for a special dinner. Serve it over pasta, rice, or with roasted vegetables for a satisfying meal.

Ingredients

  • Boneless, skinless chicken breasts
  • Olive oil
  • Garlic, minced
  • Chicken broth
  • Heavy cream
  • Sun-dried tomatoes, chopped
  • Red pepper flakes
  • Parmesan cheese, grated
  • Salt and black pepper
  • Fresh basil for garnish

Instructions

  1. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and black pepper, then place them in the pan. Sear for 4-5 minutes on each side until golden brown. Remove from the pan and set aside.
  2. Prepare the Sauce: Reduce the heat to medium and add more olive oil if needed. Sauté the minced garlic for about 30 seconds until fragrant, then pour in the chicken broth. Stir, scraping up any browned bits from the bottom of the pan.
  3. Combine the Cream and Tomatoes: Add the heavy cream, sun-dried tomatoes, and red pepper flakes to the skillet. Stir well and let the sauce simmer gently for 2-3 minutes to thicken slightly.
  4. Return the Chicken: Place the seared chicken breasts back into the skillet. Spoon the sauce over them and let everything cook together for another 5-7 minutes until the chicken is fully cooked, reaching an internal temperature of 165°F.
  5. Finish with Parmesan and Basil: Stir in the grated Parmesan cheese, allowing it to melt into the sauce. Garnish with fresh basil before serving for added freshness and aroma.

Notes

  • For extra flavor, marinate the chicken in olive oil, garlic, and Italian seasoning for 30 minutes before cooking.
  • If the sauce thickens too much, add a little extra chicken broth to loosen it.
  • For a low-carb option, serve over cauliflower rice or sautéed spinach instead of pasta.
  • Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat gently over low heat.
