Description

Mexican Cucumber Salad is a quick and refreshing dish made with fresh cucumbers, lime, chili powder, and cilantro. It’s a flavorful, light, and healthy side dish, perfect for summer gatherings or as a snack.

Ingredients

Scale
  • 2 large cucumbers, sliced
  • Juice of 2 limes
  • 1 teaspoon chili powder
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon salt
  • 1 teaspoon honey or sugar (optional, for sweetness)

Instructions

  1. Wash the cucumbers and slice them into thin rounds or half-moons.
  2. In a small bowl, combine the lime juice, chili powder, salt, and honey or sugar. Stir well until the salt dissolves and the mixture is smooth.
  3. Place the sliced cucumbers in a large bowl and pour the dressing over them. Toss to coat evenly.
  4. Chop the cilantro and add it to the salad, then toss again to combine.
  5. Chill the salad in the refrigerator for 15-20 minutes before serving to allow the flavors to meld.

Notes

  • For extra spice, add finely chopped jalapeño or more chili powder to taste.
  • If you prefer a creamier version, try adding some Mexican crema or diced avocado.
  • The salad can be made ahead and stored for up to 24 hours, though it’s best served fresh.
