Description
Mexican Cucumber Salad is a quick and refreshing dish made with fresh cucumbers, lime, chili powder, and cilantro. It’s a flavorful, light, and healthy side dish, perfect for summer gatherings or as a snack.
Ingredients
Scale
- 2 large cucumbers, sliced
- Juice of 2 limes
- 1 teaspoon chili powder
- 1/4 cup fresh cilantro, chopped
- 1/2 teaspoon salt
- 1 teaspoon honey or sugar (optional, for sweetness)
Instructions
- Wash the cucumbers and slice them into thin rounds or half-moons.
- In a small bowl, combine the lime juice, chili powder, salt, and honey or sugar. Stir well until the salt dissolves and the mixture is smooth.
- Place the sliced cucumbers in a large bowl and pour the dressing over them. Toss to coat evenly.
- Chop the cilantro and add it to the salad, then toss again to combine.
- Chill the salad in the refrigerator for 15-20 minutes before serving to allow the flavors to meld.
Notes
- For extra spice, add finely chopped jalapeño or more chili powder to taste.
- If you prefer a creamier version, try adding some Mexican crema or diced avocado.
- The salad can be made ahead and stored for up to 24 hours, though it’s best served fresh.
