Ingredients
Scale
- 16 oz Cream Cheese, softened
- 1 cup Sharp Cheddar Cheese, shredded
- ½ cup Dried Cranberries, finely chopped
- ½ cup Pecans, toasted & finely chopped
- 2 tbsp Fresh Parsley, chopped
- ½ tsp Garlic Powder (optional)
- ½ tsp Smoked Paprika (optional)
- Crackers, Pretzels, or Veggie Sticks for serving
Instructions
- In a medium-sized bowl, combine softened cream cheese, shredded cheddar, garlic powder, and smoked paprika. Mix until smooth.
- Add half of the chopped cranberries, pecans, and parsley. Stir to combine.
- Cover the bowl and refrigerate for 20-30 minutes to firm up the mixture.
- Once chilled, portion out the mixture and roll it into 1-inch balls.
- In a shallow dish, combine the remaining cranberries, pecans, and parsley. Roll each cheese ball in this mixture to coat it evenly.
- Place the coated cheese balls on a platter and refrigerate until ready to serve.
Notes
- To make the cheese balls ahead of time, prepare them up to 3 days in advance and store in an airtight container.
- If you prefer a tangier flavor, substitute half of the cheddar with crumbled goat cheese.
- Toast the pecans before chopping to enhance their flavor.
- For a different flavor, try swapping cranberries with dried pineapple or sun-dried tomatoes.
- To make these nut-free, substitute the pecans with sunflower seeds or pepitas.
