Instructions
- Place the fresh mint leaves in a saucepan with the milk and heat over medium heat until it just begins to simmer. Let it steep for about 5 minutes, then remove from the heat and let it cool completely. Strain out the mint leaves.
- In a mixing bowl, combine the heavy cream, cooled mint-infused milk, granulated sugar, and a pinch of salt. Stir until the sugar dissolves completely.
- Add the vanilla extract and mix until fully incorporated. Taste the mixture and adjust sweetness or vanilla if needed.
- Pour the mixture into a shallow dish or large bowl. If you have an ice cream maker, follow the manufacturer’s instructions. If not, cover the bowl with plastic wrap and place it in the freezer.
- Stir the mixture with a fork every 30 minutes to break up the ice crystals, continuing for 3-4 hours until it is firm and scoopable.
- Once the ice cream is firm, stir in the chocolate chips and fold them in gently to distribute evenly.
- Cover and return the ice cream to the freezer for at least 1 hour to firm up before serving.
Notes
- If you prefer a stronger mint flavor, increase the amount of mint leaves or use mint extract.
- If making dairy-free, substitute heavy cream and milk with coconut cream and almond milk.
- Stir the ice cream every 30 minutes to avoid ice crystals and achieve a smoother texture.
