- 1 cup (200g) granulated sugar
- 1 large egg (room temperature)
- 1 teaspoon vanilla extract
- 1 tablespoon (6g) fresh lime zest
- 2 tablespoons (30ml) fresh lime juice
- 2 tablespoons (10g) finely chopped fresh mint leaves
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream butter and sugar until light and fluffy.
- Add egg and vanilla extract, mixing until smooth.
- Stir in lime zest, lime juice, and chopped mint.
- Gradually mix dry ingredients into wet ingredients until a soft dough forms.
- Scoop dough into small balls and place on prepared baking sheet.
- Flatten slightly with your fingers or the back of a spoon.
- Bake for 10–12 minutes until edges are lightly golden.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
