Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss sliced carrots with olive oil, cumin, coriander, paprika, salt, and pepper, then spread evenly on the baking sheet.
- Roast carrots for 20–25 minutes, turning halfway, until tender and slightly caramelized.
- Rinse lentils and cook in salted water for 15–20 minutes until tender but not mushy, then drain.
- Chop red onion and fresh herbs; optionally soak onion in cold water to reduce sharpness.
- In a large bowl, combine cooked lentils, roasted carrots, onion, and herbs.
- Whisk olive oil, lemon juice, minced garlic, salt, and pepper to create dressing.
- Pour dressing over salad and toss gently to combine.
- Taste and adjust seasoning as needed.
- Let sit for 10–15 minutes before serving to enhance flavor.

- Do not overcook lentils to maintain texture.
- Cut carrots evenly for consistent roasting.
- Add a pinch of cinnamon or turmeric for extra Moroccan flavor.
