Description

  • 1 cup rolled oats
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup unsalted butter, melted

  • 1 teaspoon vanilla extract
  • 3 cups mulberries (fresh or frozen)
  • 1/3 cup granulated sugar (for filling)
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a large bowl, mix flour, oats, granulated sugar, brown sugar, and salt.
  3. Add melted butter and vanilla extract, then stir until crumbly.
  4. Reserve one-third of the mixture for topping and press the rest into the pan to form the crust.
  5. In another bowl, combine mulberries, sugar, lemon juice, and cornstarch.
  6. Spread the mulberry mixture evenly over the crust.
  7. Sprinkle the reserved crumble mixture on top.
  8. Bake for 35–45 minutes until golden brown and bubbly.
  9. Cool completely before lifting from the pan and slicing into bars.

Notes

  • Use frozen mulberries without thawing, but increase cornstarch slightly if needed.
  • Allow bars to cool fully for clean slicing and proper setting.
  • Store at room temperature for 2 days or refrigerate up to 1 week.
  • Bars can be frozen for up to 3 months.
  • Add nuts or spices like cinnamon for extra flavor variation.
