Instructions
- Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
- In a large bowl, mix flour, oats, granulated sugar, brown sugar, and salt.
- Add melted butter and vanilla extract, then stir until crumbly.
- Reserve one-third of the mixture for topping and press the rest into the pan to form the crust.
- In another bowl, combine mulberries, sugar, lemon juice, and cornstarch.
- Spread the mulberry mixture evenly over the crust.
- Sprinkle the reserved crumble mixture on top.
- Bake for 35–45 minutes until golden brown and bubbly.
- Cool completely before lifting from the pan and slicing into bars.
Notes
- Use frozen mulberries without thawing, but increase cornstarch slightly if needed.
- Allow bars to cool fully for clean slicing and proper setting.
- Store at room temperature for 2 days or refrigerate up to 1 week.
- Bars can be frozen for up to 3 months.
