Ingredients
Scale
- 2 1/2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 2 tsp vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1/2 cup fresh strawberries, pureed
- 1 1/2 cups heavy cream
- 1/4 cup powdered sugar (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and prepare three 9-inch round cake pans with butter and flour.
- In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a separate bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients, alternating with the milk, mixing until smooth.
- Divide the batter evenly into three bowls. Stir cocoa powder into one for the chocolate layer, strawberry puree into another for the strawberry layer, and leave the third as vanilla.
- Pour each batter into its own prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Allow the cakes to cool for 10 minutes in the pans, then transfer to wire racks to cool completely.
- Whip the heavy cream with powdered sugar until stiff peaks form, and set aside for frosting.
- Once cooled, frost the chocolate layer with chocolate frosting, the vanilla layer with vanilla frosting, and the strawberry layer with strawberry frosting. Stack the layers evenly.
- Decorate with sprinkles or fresh strawberries if desired.
Notes
- Ensure cakes are completely cooled before frosting to avoid melting.
- For a gluten-free version, use almond flour instead of regular flour.
- Frozen strawberries can be used if fresh strawberries are unavailable; just make sure to drain them well.
- For extra flavor, consider adding chocolate ganache between the layers.
