Instructions
- Wash and slice the 6 medium ripe nectarines into evenly sized pieces to ensure even cooking and texture.
- Add the sliced nectarines, 1/4 cup granulated sugar or 3 tablespoons honey, 1 tablespoon lemon juice, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, 1/4 cup water or apple juice, and 1/8 teaspoon salt to a medium saucepan.
- Cook over medium heat, stirring gently until the nectarines begin releasing their juices and soften slightly.
- Reduce heat to low and simmer for 10–15 minutes, stirring occasionally to prevent sticking while allowing the fruit to soften into a light compote texture.
- Taste and adjust sweetness if desired by adding a little more sugar or extra lemon juice for balance.
- If a thicker consistency is preferred, stir in the mixture of 1 teaspoon cornstarch and 1 tablespoon water, then simmer for an additional 2–3 minutes until slightly thickened.
- Remove from heat when the nectarines are tender but still hold their shape and the syrup lightly coats a spoon.
- Allow the compote to cool slightly before serving warm or refrigerate for a chilled version.
- Serve topped with 1 tablespoon chopped fresh mint if desired and pair with 1/2 cup vanilla ice cream, yogurt, whipped cream, pancakes, cheesecake, or oatmeal.
