Ingredients
Scale
- 6 ripe nectarines, pitted and chopped
- 2 cups plain yogurt
- 2 tbsp honey
- 1 tsp vanilla extract
Instructions
- Wash, pit, and chop the nectarines into chunks.
- Place the nectarines in a blender and puree until completely smooth.
- In a medium bowl, combine the yogurt, honey, and vanilla extract. Stir until well blended.
- Spoon a layer of yogurt mixture into each popsicle mold.
- Add a layer of nectarine puree over the yogurt.
- Continue alternating layers until the molds are nearly full, finishing with a yogurt layer.
- Insert a skewer or thin stick into each mold and gently swirl the layers to create a marbled effect.
- Place popsicle sticks into the molds.
- Freeze for at least 6 hours or until completely firm.
- To serve, run warm water over the outside of the molds for a few seconds and gently remove the popsicles.
Notes
- Use fully ripe nectarines for the sweetest flavor.
- Full-fat yogurt creates a creamier texture.
- Adjust the honey based on the sweetness of your fruit.
- Greek yogurt can be used for extra creaminess.
- Store frozen popsicles in airtight freezer bags for up to 2 months.
- Peaches can be substituted for nectarines if desired.
