  • ½ cup melted butter
  • 8 oz cream cheese (room temperature)
  • ½ cup powdered sugar
  • 1 cup heavy whipping cream
  • 2 tbsp molasses
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • Whipped cream (for topping)
  • Crushed gingerbread cookies (for garnish)

Instructions

  1. In a bowl, combine graham cracker crumbs (or gingerbread cookie crumbs) with melted butter. Stir until evenly coated. Press about 2 tablespoons of the mixture into the bottom of each serving cup. Set aside.
  2. In a large bowl, beat cream cheese and powdered sugar until smooth and creamy. Add molasses, ground ginger, cinnamon, and nutmeg. Beat until well combined.
  3. Whip the heavy cream in a separate bowl until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  4. Spoon or pipe the cheesecake filling into each cup on top of the crust. Smooth the tops with a spatula.
  5. Refrigerate for at least 2-3 hours, or until the filling is set and firm.
  6. Before serving, top each cheesecake cup with whipped cream, crushed gingerbread cookies, and a dusting of cinnamon if desired.
