Description

No Bake Lemon Icebox Cake is a creamy, refreshing layered dessert made with graham crackers, lemon pudding, cream cheese, whipped topping, and fresh lemon. This easy no-bake recipe is perfect for summer gatherings, potlucks, holidays, and make-ahead entertaining.

  • 1 tablespoon (6 g) lemon zest
  • 1 container (8 oz / 225 g) whipped topping, thawed
  • 1416 whole graham cracker sheets (about 7 oz / 200 g)
  • 1 lemon, thinly sliced for garnish (optional)
  • 1/2 cup (120 ml) additional whipped topping for garnish (optional)

Instructions

  1. In a large bowl, whisk together 2 packages (3.4 oz each) lemon pudding mix and 3 cups cold milk until smooth. Let stand for 5 minutes until thickened.
  2. In a separate bowl, beat 8 oz softened cream cheese until creamy and lump-free.
  3. Add 1 cup powdered sugar, 2 tablespoons lemon juice, and 1 tablespoon lemon zest to the cream cheese. Mix until smooth.
  4. Fold the prepared pudding mixture into the cream cheese mixture until fully combined.
  5. Gently fold in 8 oz whipped topping until light and fluffy.
  6. Arrange a layer of 14–16 graham cracker sheets across the bottom of a 9×13-inch baking dish, breaking crackers as needed to fit.
  7. Spread one-third of the lemon filling evenly over the graham crackers.
  8. Repeat the layers two more times, ending with the remaining lemon filling on top.
  9. Smooth the top with a spatula and cover tightly.
  10. Refrigerate for at least 6 hours, preferably overnight, until fully set and the graham crackers have softened.
  11. Garnish with lemon slices and additional whipped topping before serving.
  12. Slice into 12 portions and serve chilled.
