Description
No-Bake Peanut Butter Buckeye Bars are a simple, delicious treat made with creamy peanut butter and chocolate. These easy-to-make bars require no baking and are perfect for satisfying sweet cravings with minimal effort.
Ingredients
Scale
- ½ cup (113 grams) butter, softened
- 2 cups (480 grams) creamy peanut butter
- 3 ½ cups (420 grams) powdered confectioners sugar
- 1 ½ teaspoons (7 ml) vanilla extract
- 2 cups (360 grams) chocolate chips or chunks (12 ounces)
- 1 tablespoon (14 g) butter (for the chocolate layer)
Instructions
- Combine butter, peanut butter, powdered sugar, and vanilla extract in a large bowl. Beat until smooth. The mixture will be thick and slightly crumbly.
- Line a 9×13-inch pan with parchment paper. Press the peanut butter mixture firmly into the pan with your hands to form an even layer.
- In a microwave-safe bowl, melt the chocolate chips and 1 tablespoon of butter in 30-second intervals, stirring between each, until smooth.
- Pour the melted chocolate over the peanut butter layer and spread evenly with a spatula.
- Allow the bars to set at room temperature for 45 minutes to 1 hour, or refrigerate to speed up the process.
- Once set, remove the bars from the pan by lifting the parchment paper. Cut into squares or triangles.
Notes
- For best results, use regular creamy peanut butter instead of natural peanut butter to achieve the ideal texture.
- If you prefer a thicker chocolate layer, you can double the amount of chocolate used.
- Allow the bars to set at room temperature before cutting to avoid cracking the chocolate layer.
- These bars can be stored in the refrigerator for up to 1 month, or frozen for up to 4 months.
