  • 1 lb Smoked Sausage Rope (sliced)
  • 2 tablespoons olive oil
  • 1 cup onion (diced)
  • 4 teaspoons garlic (minced, about 4 cloves)
  • 8 ounces bow tie pasta
  • 14 ounces diced tomatoes
  • 2 cups chicken stock
  • 1/2 cup heavy cream (or half and half, or milk)
  • 1/2 teaspoon cracked pepper
  • 1 teaspoon salt
  • 1.5 cups cheddar cheese (grated)
  • 2 tablespoons green onions (sliced, optional for garnish)

Instructions

  1. Dice the onion, slice the sausage, mince the garlic, and open the can of tomatoes. Chop green onions if using.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  3. Add the sliced sausage and diced onion. Cook until lightly browned and onion begins to soften, about 1–2 minutes.
  4. Add garlic and sauté for 30 seconds until fragrant.
  5. Pour in the dry pasta, diced tomatoes with juices, chicken stock, heavy cream, salt, and pepper. Stir to combine.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes or until pasta is tender. Stir occasionally and add extra broth if needed.
  7. Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
  8. Cover and let sit for 5 minutes, then stir again before serving.
  9. Garnish with green onions if desired and serve warm.

  • You can substitute heavy cream with milk or half and half plus a bit of cream cheese for thickness.
  • Short pasta shapes like penne, shells, or rigatoni work best in this recipe.
