- 2 tablespoons olive oil
- 1 cup onion (diced)

- 8 ounces bow tie pasta
- 14 ounces diced tomatoes
- 2 cups chicken stock
- 1/2 cup heavy cream (or half and half, or milk)
- 1/2 teaspoon cracked pepper
- 1 teaspoon salt
- 1.5 cups cheddar cheese (grated)
- 2 tablespoons green onions (sliced, optional for garnish)
Instructions
- Dice the onion, slice the sausage, mince the garlic, and open the can of tomatoes. Chop green onions if using.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add the sliced sausage and diced onion. Cook until lightly browned and onion begins to soften, about 1–2 minutes.
- Add garlic and sauté for 30 seconds until fragrant.
- Pour in the dry pasta, diced tomatoes with juices, chicken stock, heavy cream, salt, and pepper. Stir to combine.
- Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes or until pasta is tender. Stir occasionally and add extra broth if needed.
- Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
- Cover and let sit for 5 minutes, then stir again before serving.
- Garnish with green onions if desired and serve warm.
