Instructions
- Chop the carrots, celery, potatoes, zucchini, and onions into bite-sized pieces. Mince the garlic.
- Heat olive oil in a large pot over medium heat. Add onions, garlic, carrots, and celery, and sauté for 5 minutes.
- Pour in the vegetable broth and add the potatoes. Bring to a simmer and cook for about 10 minutes.
- Add zucchini and chopped tomatoes to the pot. Simmer for another 10 minutes, or until the vegetables are tender.
- Add bay leaf, thyme, rosemary, salt, and pepper. Adjust seasoning to taste and simmer for another 5 minutes.
