- 1 cup orzo pasta

- 2 cups fresh spinach
- 1/2 cup Kalamata olives, sliced
- 1/2 cup feta cheese, crumbled
- 1 lemon, juiced and zested
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon fresh parsley or dill, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season the chicken with oregano, salt, and black pepper, then sear for 3–4 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add onion and cook for 2–3 minutes until softened. Stir in garlic and cook for 30 seconds until fragrant.
- Add the orzo pasta and stir for 1–2 minutes to lightly toast it for added flavor.
- Pour in chicken broth, lemon juice, and lemon zest. Stir in cherry tomatoes and red pepper flakes if using.
- Return the chicken to the skillet, nestling it into the orzo mixture. Cover and simmer over medium-low heat for 12–15 minutes until the chicken is fully cooked and the orzo is tender.
- Stir in spinach and cook for 1–2 minutes until wilted. Add more broth if the orzo becomes too thick.
- Top with Kalamata olives, feta cheese, and fresh parsley or dill.
- Let the skillet rest for 2–3 minutes before serving for the best texture and flavor.
