Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in orange juice, orange zest, and vanilla extract.
  6. Gradually add dry ingredients alternating with milk, mixing until just combined.
  7. Fill cupcake liners about two-thirds full with batter.
  8. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  9. Allow cupcakes to cool completely before frosting.
  10. Prepare frosting by beating butter (and cream cheese if using) until smooth.
  11. Add powdered sugar gradually, then mix in heavy cream and vanilla extract until fluffy.
  12. Frost cooled cupcakes and garnish with orange zest if desired.
