Description

Oreo Brookies are rich dessert bars made with fudgy brownie batter, chewy chocolate chip cookie dough, and crunchy Oreo cookies layered together for the ultimate cookies-and-cream chocolate treat. Perfect for parties, bake sales, or easy homemade desserts, these gooey brookies deliver soft centers, crisp edges, and indulgent flavor in every bite.

Ingredients

Scale
  • 1 box (18.3 oz) brownie mix
  • 2 large eggs (for brownie mix)
  • 1/2 cup vegetable oil (for brownie mix)
  • 1/4 cup water (for brownie mix)
  • 1 tube (16.5 oz) refrigerated chocolate chip cookie dough
  • 16 Oreo cookies
  • 1/2 cup (90 g) semi-sweet chocolate chips
  • 1/2 cup (113 g) unsalted butter, softened (if making homemade cookie dough)
  • 1/2 cup (100 g) granulated sugar (if making homemade cookie dough)
  • 1/2 cup (110 g) brown sugar (if making homemade cookie dough)
  • 1 large egg (if making homemade cookie dough)
  • 1 tsp vanilla extract (if making homemade cookie dough)
  • 1 1/2 cups (190 g) all-purpose flour (if making homemade cookie dough)
  • 1/2 tsp baking soda (if making homemade cookie dough)
  • 1/4 tsp salt (if making homemade cookie dough)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper or lightly grease it.
  2. Prepare the brownie batter by mixing the brownie mix, eggs, vegetable oil, and water until smooth.
  3. Spread the brownie batter evenly into the prepared baking dish.
  4. Arrange 16 Oreo cookies evenly across the brownie layer, gently pressing them into the batter.
  5. Prepare chocolate chip cookie dough or use ready-made dough. Stir in chocolate chips if desired.
  6. Drop spoonfuls of cookie dough over the Oreo layer and gently spread without fully covering every gap.
  7. Bake for 30–35 minutes or until edges are lightly golden and the center appears mostly set.
  8. Check doneness with a toothpick inserted into the cookie portion; a few moist crumbs are ideal.
  9. Cool in the pan for at least 20–30 minutes before slicing into bars.
  10. Serve warm for gooey texture or cooled for cleaner slices and firmer layers.

Notes

  • Avoid overbaking to keep Oreo Brookies fudgy and chewy.
  • Let brookies cool before slicing for neater presentation.
  • Store leftovers in an airtight container at room temperature for up to 4 days.
  • Freeze individual slices for up to 2 months for easy desserts later.
  • Try double-stuffed Oreos or dark chocolate chips for extra richness.
  • Warm slices in the microwave for 10–15 seconds before serving for a gooey texture.
