Ingredients
Scale
- 1 box Vanilla Cake Mix
- 2 large Eggs
- 1/2 cup Vegetable Oil (or melted butter)
- 1 teaspoon Mint Extract
- Green Food Coloring (few drops)
- 1 package Oreo Cookies, crushed
- 1/2 cup White Chocolate Chips
- Powdered Sugar (optional, for crinkle coating)
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine cake mix, eggs, and oil or melted butter. Stir until dough forms.
- Add mint extract and green food coloring. Mix until dough turns a light green color.
- Fold in crushed Oreos and white chocolate chips.
- Optional: Roll dough balls in powdered sugar for a crinkle effect.
- Scoop dough into balls and place on the prepared baking sheet, spacing them evenly.
- Bake for 10-12 minutes, until edges are lightly set and centers are soft.
- Let cookies cool on the baking sheet for a few minutes before transferring to a cooling rack.
Notes
- Do not overbake the cookies; they should remain soft in the center.
- If you don’t have mint extract, peppermint extract is a great alternative.
- For a stronger mint flavor, add a few more drops of mint extract or peppermint chips.
- Chill the dough for 20 minutes before baking to prevent spreading and ensure thicker cookies.
- Store cookies in an airtight container for up to 4 days or freeze them for later use.
