Ingredients
Scale
- 1 box white cake mix: creates a light and fluffy base for the cake
- 3 large eggs: helps structure and richness
- 1/2 cup vegetable oil: adds moisture and softness
- 1 cup water: combines with cake mix for batter consistency
- 1 box strawberry gelatin (3 oz): provides red color and fruity flavor
- 1 box blue raspberry gelatin (3 oz): provides blue patriotic color and flavor
- 2 cups boiling water: dissolves gelatin for easy pouring
- 1 1/2 cups cold water: helps set the gelatin layers
- 1 tub whipped topping (8 oz): creamy topping for smooth finish
- Fresh strawberries (optional): garnish and freshness
- Fresh blueberries (optional): garnish and extra color contrast
Instructions
- Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking pan with nonstick spray.
- Prepare the white cake mix according to package instructions using eggs, oil, and water.
- Pour batter into the prepared pan and bake for 25–30 minutes or until a toothpick inserted comes out clean.
- Allow the cake to cool for about 15 minutes, then use the handle of a wooden spoon to poke holes evenly across the cake.
- In separate bowls, dissolve strawberry gelatin in 1 cup boiling water and blue gelatin in another 1 cup boiling water. Stir until fully dissolved.
- Add 3/4 cup cold water to each gelatin mixture and mix well.
- Carefully pour strawberry gelatin into half of the holes and blue gelatin into the other half, ensuring even distribution.
- Refrigerate the cake for at least 3–4 hours until gelatin is fully set.
- Spread whipped topping evenly over the chilled cake surface.
- Garnish with fresh strawberries and blueberries if desired, then slice and serve cold.
Notes
- Make sure the cake is slightly warm (not hot) before poking holes to help gelatin absorb properly.
- Do not rush chilling time; full setting ensures clean red and blue layers.
- You can use homemade whipped cream instead of store-bought topping for a richer flavor.
- Adjust gelatin colors to match different holidays or themes if desired.
- Store covered in the refrigerator for up to 3 days for best freshness.
