Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, cream softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add egg and vanilla extract to the butter mixture and mix until fully combined.
  5. Gradually fold the dry ingredients into the wet ingredients until a soft dough forms.
  6. Pat chopped peaches dry with paper towels and gently fold them into the dough. Stir in oats if using.
