Description

Peanut brittle is a classic, old-fashioned candy that delivers the perfect combination of sweet, salty, and crunchy. With simple ingredients like sugar, peanuts, and butter, this homemade treat is quick to prepare and ideal for gifting or enjoying as a snack. Its rich, golden color and crisp texture make it an irresistible choice for candy lovers.

Ingredients

Scale
  • 1 cup Granulated Sugar
  • 1/2 cup Corn Syrup
  • 1 1/2 cups Unsalted Roasted Peanuts
  • 2 tablespoons Butter
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla Extract

Instructions

  1. Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
  2. In a heavy saucepan, combine sugar, corn syrup, and butter over medium heat. Stir constantly until the sugar dissolves and the mixture begins to boil.
  3. Once boiling, increase the heat and cook for 4-5 minutes until the syrup reaches a golden amber color.
  4. Stir in the peanuts and cook for an additional 2-3 minutes until the peanuts are well-coated.
  5. Remove the saucepan from heat, then quickly stir in the baking soda and vanilla extract. The mixture will bubble up, so be careful.
  6. Pour the hot mixture onto the prepared baking sheet and spread it evenly with a spatula.
  7. Allow the peanut brittle to cool completely for about 1 hour, or until it hardens. Once cooled, break into pieces.
  8. Store the peanut brittle in an airtight container at room temperature for up to 2 weeks.

Notes

  • Ensure the mixture reaches the hard crack stage (300°F) for the best texture.
  • Do not stir the mixture once it starts boiling, as this could cause the sugar to crystallize.
  • Allow the brittle to cool completely before breaking it into pieces for a clean break.
  • For a spicy version, consider adding a pinch of cayenne pepper or chili powder to the peanut mixture.
