Description

These peanut butter filled brownie cookies combine rich, fudgy chocolate cookie dough with a creamy peanut butter center for a decadent, beginner-friendly treat.


Ingredients

  • 1/2 cup creamy peanut butter
  • 1/2 cup confectioners’ sugar
  • 8 ounces semi-sweet chocolate, coarsely chopped
  • 3/4 cup all-purpose flour
  • 1/4 cup natural unsweetened or Dutch-process cocoa powder
  • 1 teaspoon espresso powder (optional)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 5 tablespoons unsalted butter, softened
  • 3/4 cup packed light or dark brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract

Instructions

  1. In a small bowl, mix the peanut butter and confectioners’ sugar until smooth. Scoop into small balls and freeze for at least 1 hour.
  2. Melt the chopped chocolate in the microwave or over a double boiler. Set aside to cool slightly.
  3. Whisk together the flour, cocoa powder, espresso powder, baking powder, and salt in a medium bowl.
  4. In a large bowl, beat the butter, brown sugar, and granulated sugar until smooth. Add eggs and vanilla, then beat for 2 minutes. Add melted chocolate and beat again until fully combined.
  5. Mix the dry ingredients into the wet mixture until just combined. Cover and chill the dough for 1 hour.
  6. Preheat oven to 350°F (177°C). Line baking sheets with parchment paper.
  7. Shape the cookies: Scoop out a heaping tablespoon of dough and roll into a ball. Make an indentation and place a frozen peanut butter ball in the center. Cover with a small piece of dough and re-roll into a ball.
  8. Place cookies 3 inches apart on baking sheets. Bake for 12–13 minutes or until edges are set. Let cool on the sheet for 10 minutes before transferring to a wire rack.

Notes

  • Use natural or conventional peanut butter, but avoid crunchy types for smoother filling.
  • Only remove a few peanut butter balls from the freezer at a time to prevent melting.
  • Chill both filling and dough to make shaping easier and prevent spreading during baking.
  • Clean hands frequently while shaping to make the process smoother.
