Description

Pina Colada Lush is a tropical, no-bake dessert that combines creamy coconut and sweet pineapple in a deliciously refreshing treat. Perfect for summer parties or any occasion, it’s a simple yet indulgent dish that everyone will love.

Ingredients

  • Graham Cracker Crumbs: 1 1/2 cups, provides a crunchy, buttery base.
  • Butter: 1/2 cup (1 stick), adds richness to the crust.
  • Cream Cheese: 8 oz, the base for the creamy layers.
  • Powdered Sugar: 1 cup, sweetens the cream cheese layer.
  • Whipped Topping: 8 oz, lightens the cream cheese mixture for a fluffy texture.
  • Pineapple Pudding Mix: 3.4 oz box, gives a vibrant pineapple flavor to the dessert.
  • Coconut Milk: 1 cup, adds smooth, tropical coconut flavor.
  • Pineapple Chunks: 1 cup, adds a juicy, fruity element to the dessert.
  • Toasted Coconut: 1/4 cup, a garnish that adds texture and a touch of coconut flavor.

Instructions

  1. Prepare the crust by combining graham cracker crumbs and melted butter, then press the mixture into the bottom of a 9×13-inch baking dish. Chill to set.
  2. For the cream cheese layer, beat cream cheese and powdered sugar until smooth, then fold in the whipped topping. Spread evenly over the chilled crust.
  3. In a medium bowl, mix pineapple pudding mix and coconut milk until thickened. Spread this mixture over the cream cheese layer.
  4. Gently fold in pineapple chunks into the pudding mixture and evenly distribute. Spread over the pudding layer.
  5. Top with toasted coconut, then refrigerate for at least 4 hours or overnight for the best texture and flavor.
  6. Serve chilled and enjoy the tropical layers of Pina Colada Lush!

Notes

  • Chill the dessert for at least 4 hours to allow the layers to set properly.
  • For a firmer crust, add extra butter to the graham cracker crumb mixture.
  • You can add coconut extract to enhance the coconut flavor.
