Instructions

  1. Prepare the pie crust according to package or recipe directions and allow it to cool completely.
  2. Drain the crushed pineapple thoroughly to remove excess moisture.
  3. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  4. Add the sugar and coconut extract and mix until fully combined.
  5. Fold the drained crushed pineapple into the cream cheese mixture.
