  • 1 tsp pumpkin pie spice (optional, for frosting)
  • 1/2 cup brown sugar (for frosting)

Instructions

  1. In a large bowl, cream together the softened vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla extract until the mixture is light and fluffy.
  2. In a separate bowl, whisk together the all-purpose flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to over-mix.
  4. Cover the dough and chill it in the fridge for 30 minutes or overnight.
  5. Preheat your oven to 350°F (177°C).
  6. Scoop 2-inch balls of dough using a cookie scooper or spoon. Flatten each dough ball into a disk shape.
  7. Arrange the cookie disks on a parchment-lined baking sheet, spacing them a couple of inches apart.
  8. Bake the cookies on the center rack for 10-12 minutes. Let them cool completely on the baking sheet.
  9. In a medium bowl, whip together the frosting ingredients until smooth and fluffy.
  10. Once the cookies are cool, pipe the frosting onto each cookie in a swirl, starting from the center and moving outward.
  11. For an extra touch, dust the tops of the frosted cookies with a bit of pumpkin pie spice.
