- 2 eggs + 1 egg yolk, whisked

- Pinch of salt
- 1 1/2 cups gluten-free old-fashioned oats
- 1/2 cup almond flour
- 1/2 cup brown sugar
- 1/2 cup chopped pecans
- 1 teaspoon ground cinnamon (for topping)
- Pinch of salt (for topping)
- 6 tablespoons unsalted butter, cubed
Instructions
- Preheat oven to 350°F (175°C) and grease a 10-inch cast iron skillet or baking dish with neutral oil.
- In a mixing bowl, combine pumpkin puree, maple syrup, vanilla extract, whisked eggs, almond milk, pumpkin pie spice, cinnamon, and a pinch of salt. Whisk until smooth.
- Pour the pumpkin filling into the prepared skillet and set aside.
- In another bowl, mix oats, almond flour, brown sugar, chopped pecans, cinnamon, and salt. Add cubed butter and work it into the mixture using your hands until clumpy.
- Sprinkle the crisp topping evenly over the pumpkin filling.
- Bake for 30–35 minutes, or until the topping is golden and the filling is just set.
- Remove from the oven and let cool for 10 minutes before serving.
- Serve warm with a scoop of vanilla ice cream or whipped cream.
